Summer will bring Spanish food, ice cream, martinis and mac and cheese to the Fox Cities.

Just not all in one place.

Businesses slated to open over the next few months range from Spanish/Hispanic restaurants to coffee shops and ice cream parlors. And there’s one bar/lounge that will be a big hit with taxidermy fans.

•Castilla Bistro & Tapas, Grand Chute: This new Spanish restaurant is moving closer to its opening day. It took the former Gather Americana/The Seasons space at 213 S. Nicolet Road, south of the Fox River Mall.

•Crazy Sweet expansion, Appleton: The Crazy Sweet candy shop in downtown Appleton is adding a small ice cream parlor on its Appleton Street side, facing Houdini Plaza.

•MACS, Darboy: The homegrown Wisconsin restaurant called MACS, an acronym for Macaroni and Cheese Shop, is putting its fourth location at W3192 County KK in Buchanan, in the strip mall east of Kohl’s.

•Hammerheads, Menasha: New bar owner Mark Riker took over the former Margaritaville space at 6 Tayco St. and is putting in a new bar/martini lounge called Hammerheads.
